The healing power of live food is in the amounts of Enzymes it contains. Enzymes are types of protein catalysts that have to be present for life to exist. Enzymes play a vital role in the digestion, assimilation and elimination of food and its by-products.

Enzymes appear in large numbers in living foods (foods that are still growing, like sprouts, fruits and vegetables that are eaten within two days of being picked), slightly less in raw foods (live foods become raw food within 24-48 hours after being harvested) and do not exist in cooked, processed food.
